One such hero is Dr. Eric Schneider, Director of Research & Innovation at the Cape Eleuthera Institute, part of The Island School in South Eleuthera, The Bahamas.
The Island School is a living model of sustainability, where scientists, engineers, educators, and students work together to find solutions to global challenges.

Breadfruit in Action
Three years ago, TTFF donated breadfruit trees to the Institute. Today, those trees are bearing fruit. When Elidieu Joseph, a farmer at The Island School, harvested the first breadfruit, he recommended a simple preparation: quarter and boil it for a tasty, nutritious meal. In the school’s kitchen, Tiffany McKinney, chef and local food coordinator whipped up a breadfruit and okra soup that students and staff alike raved about.
But this first harvest is more than food—it’s a sign of resilience, innovation, and the promise of breadfruit to strengthen food systems across The Bahamas.

Dr. Schneider’s Leadership
Dr. Schneider connects people to the environment as a path to sustainability. Under his guidance, the Institute engages students in hands-on marine science and sustainability projects, including a new agroforestry and breadfruit research program. This living system will produce food for schools and teach the community how to integrate farming with ecological stewardship.
